Smashed Potatoes

Serves 4

500 grams baby potatoes
3 tbsp olive oil
3 tbsp butter (optional)
Salt to taste
Dried thyme

- If you are tracking macros, it is a good idea to leave the butter off, though you do sacrifice some of the flavour by doing so.

Smashed Potatoes

1. Boil the potatoes until soft (approximately 20 minutes).
2. Preheat oven to 200 degrees Celsius.
3. Remove the potatoes from the heat and pour the water off. Let the potatoes steam for a few minutes.
4. Line a baking tray with baking paper. And place the potatoes onto the tray.
5. Using a fork, push down on each potato to "squash" them flat.
6. Brush each potato with some of the olive oil. You can also add a touch of butter to each potato - just makes it more yummy, but does add to the fat content.
7. Bake until golden brown and crisp (approximately 30 minutes).
8. Add salt and dried thyme.
