1 cup cooked sushi rice
140 g cooked, peeled king prawns
1/2 avocado chopped (approximately 65 g)
1/4 cup chopped mango
1/2 cup cucumber
1 tbsp low fat mayonnaise
1 tbsp sushi ginger
1 tbsp soya sauce

Notes:
For a lower carbohydrate option, serves on a bed of mixed lettuce leaves as a salad.

1. Cook the sushi rice as per package instructions and leave to cool.
2. Chop the mango, avocado and cucumber.
3. Place the cooled rice into a deep bowl and top with the prawns and the chopped vegetables.
4. Top with the mayonnaise, sushi ginger and soya sauce.
