Pork Ribs & Tomato-Based BBQ Sauce

2 kg pork ribs
1 cup tomato passata
1/3 cup honey
2 tbsp apple cider vinegar
1 tbsp balsamic vinegar
2 cloves garlic crushed
1 tsp paprika
2 tsp soya sauce
1/4 tsp chilli powder
black pepper

Notes:

* If you do not have a pressure cooker, you can also wrap the ribs in foil and bake at 160 degrees Celsius for approximately 2,5 hours.
** You can also place the ribs on the BBQ if you prefer.

Pork Ribs & Tomato-Based BBQ Sauce

1. Score and peel the thin membrane off the back of the ribs.
2. Pressure cook the ribs for 30 minutes. *
3. Heat the oven to grill.
4. Mix together the tomato passata, honey, apple cider vinegar, balsamic vinegar, garlic, soya sauce and the spices.
5. Brush the ribs generously with the tomato sauce.
6. Grill until the sauce just starts to bubble (about 2 - 4 minutes). Keep an eye on the ribs so that they don't burn.**
7. You can continue basting the ribs as you go until they are nicely charred.
8. Remove from heat, allow to rest for about 10 minutes, then slice and serve.
