Meatballs in Tomato Sauce

Serves 6

For the sauce:
1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
1/2 tsp chilli flakes (optional)
1 tbsp tomato paste
2 cans of whole peeled tomatoes
500 g tomato sauce (passata)
1/4 cup beef broth
1 handful chopped basil
1 handful chopped parsley
1 tsp oregano
salt and pepper to taste

For the meatballs:
1 Kg beef mince 5%
2 large eggs beaten
2 garlic cloves, minced
Salt and pepper
1/2 tsp oregano
1 tbsp olive oil

This tomato sauce is absolutely delicious! Serve the meatballs and sauce over pasta, squash, or zucchini noodles.

Meatballs in Tomato Sauce

1. In a large pot heat the olive oil and fry the onions, garlic and chilli flakes until the onion is tender.
2. Add the tomato paste and cook for about 2 minutes.
3. Add the tinned tomatoes.
4. Stir in the tomato sauce, broth, parley, basil, oregano, salt and pepper. Bring to a boil.
5. Reduce to a simmer, and cook uncovered for about 20 minutes. Stir occasionally.
6. While the sauce is cooking, combine the mince, eggs, garlic, salt, pepper and oregano.
7. Use your hands to mix, until everything is well combined, then form into balls. I use a handful of mince for each ball.
8. In a skillet, heat the oil and fry the meatballs on both sides until golden brown.
9. Add the browned meatballs to the tomato sauce to finish cooking. About 15 to 20 minutes.
