Egg Muffins

Per muffin: 81 Calories

Makes 12 muffins

1/4 medium onion, chopped
1/2 red pepper, chopped
130 g cooked ham
1 tsp olive oil
8 eggs
2 tbsp Greek yoghurt
50 g reduced fat cheddar cheese
1/2 tsp cayenne pepper
Salt & pepper to taste

Notes:

- You can use any combination of vegetables to make these muffins.
- Chicken also works well instead of the ham.

Egg Muffins

1. Preheat the oven to 200 degrees Celsius.
2. Prepare a muffin tray using a non-stick spray or a touch of olive oil to ensure the muffins are easy to remove.
3. In a skillet heat the oil and add the onion and peppers. Cook for about 3 minutes until they start to soften.
4. Add the cooked ham to the mixture and cook for another minute. Then remove from the heat and set aside.
5. Beat the eggs and add the Greek yoghurt. Beat until well combined.
6. Add the onion mixture to the egg mixture, then add the salt, pepper and cayenne pepper.
7. Pour the mixture into the muffin tray. Fill to approximately 3/4 full.
8. Bake for about 25 minutes until cooked through.
9. Remove the egg muffins from the tray and serve immediately.
