Chicken, Feta & Tomato Bake

Serves 4

4 chicken breasts (600 g)
1 tsp oregano
2 tsp Italian seasoning
1 - 2 tsp chilli flakes (adjust for heat)
Salt and pepper to taste
3 garlic cloves
1 block of feta cheese
1 tbsp olive oil
150 g cherry tomatoes
1/2 cup chicken stock
2 cups spinach
1 handful fresh basil

Notes:

- This is such a delicious dish! Serve on top of fresh pasta or zucchini noodles with a sprinkle of Parmigiana cheese.
- Remember to add the pasta or rice to your macronutrient breakdown

Chicken, Feta & Tomato Bake

1. Preheat the oven to 200 degree Celsius.
2. In a small bowl mix together the oregano, Italian seasoning and the chilli flakes and rub into the chicken breasts.
3. Place the seasoned chicken breasts, the block of feta cheese, the tomatoes, garlic and the chicken stock into a large baking dish.
4. Bake for approximately 25 minutes.
5. Remove from the oven and add the basil and spinach to the dish. Bake for another 5 minutes.
6. Once done, mash the baked feta and the tomatoes and shred the chicken breasts. Season to taste.
