Blueberry Protein Muffins

1 1/4 cup wholewheat flour
1 cup all purpose flour
1/4 cup vanilla protein powder
1 tbsp baking powder
1/2 tsp baking soda
1/2 cup sugar
1 tsp salt
2 large eggs
1/4 cup olive oil
1 cup Greek yoghurt
1/4 cup milk
2 cups blueberries

Notes:

- You might need to adjust for sweetness depending on the type of protein powder you use. Some protein powders can be very sweet.

Blueberry Protein Muffins

1. Preheat oven to 180 degrees Celsius.
2. Line a muffin tin with muffin paper liners.
3. In a mixing bowl combine both flours, the protein powder, baking powder, baking soda, sugar and salt.
4. In a separate mixing bowl, mix together the eggs, oil, yoghurt and milk. Whisk until smooth. You can use a stand mixer for this if you prefer.
4. Add the dry ingredients to the wet ingredients and mix together until well combined.
5. If you find the batter a little dry, add another 1-2 tbsp of milk.
6. Add the blueberries to the mixture. Mix gently.
7. Fill each liner to approximately 3/4 full.
8. Bake for 20 minutes.
