1 kg boneless and skinless chicken thighs
1/4 cup balsamic vinegar
2 tbsp honey
1/4 cup olive oil
1 tbsp Dijon mustard
1/2 tsp salt

Notes:
This is a fantastic recipe to make extra chicken to use at lunch for the rest of the week. It is delicious on wraps and in salads. Hot or cold.

1. Preheat the oven to 200 degrees Celsius.
2. In a Ziplock bag, add together the vinegar, honey, olive oil, mustard and salt.
3. Mix all the ingredients together well inside the bag.
4. Add the chicken pieces to the bag, and ensure they are well covered in the balsamic glaze.
5. Empty the contents of the bag into an oven-proof dish and bake for approximately 30 mins.
