Avocado, Turkey & Egg Toast

1 slice sourdough bread
½ avocado mashed
3 rashers turkey bacon
2 eggs
Olive oil spray
Salt & pepper to taste
Chilli flakes (optional)

Notes:

You can replace the turkey with smoked salmon.

Avocado, Turkey & Egg Toast

1. Spray a skillet with olive oil.
2. Fry the turkey rashers until cooked (approximately 3 minutes a side). Remove from heat and set aside.
3. At the same time, poach 2 eggs (4 minutes for a soft egg, 6 for a hard egg).
4. Assemble the toast by spreading the mashed avocado onto the toast.
5. Follow this by layering the turkey bacon on top of the avocado, then place the eggs on top.
6. Add salt and pepper and a few chilli flakes for heat.
