For the tuna topping:
4 tins (100g) of tuna in spring water (drained)
3 tbsp light mayonnaise
1/2 cup chopped red onion
2-3 tbsp pickled jalapenos finely chopped
4 tsp jalapeno brine
Juice of 1/2 a lemon
Salt and pepper to taste
Fresh parsley finely chopped
To make the sandwich:
4 slices sourdough bread
1 large avocado
2 tomatoes
Handful of mixed lettuce leaves
4 tbsp Sriracha mayo (3 tbsp light mayo and 2 tsp Sriracha sauce)

Notes:
- You can use a high protein bread to increase the protein content of your sandwich.

1. Mix together all the ingredients for the tuna topping in a large bowl.
2. Toast the bread.
3. Spread the Sriracha mayo onto each of the sourdough slices, then the lettuce.
4. Add the tuna and top the sandwich with the tomato and avocado.
