Tuna Salad

Serves 1

1 tin tuna in spring water
2 spring onions
1/2 cup cucumber
5 cherry tomatoes
2 tablespoons Greek yoghurt mayo (see recipe)

Ingredients

Notes:

- This is my quick "go-to" when I only have a few minutes for lunch. It guarantees I get sufficient protein at lunch time and I just substitute the vegetables with what I have in the fridge.
- I love eating this with crackers, but you could also place the salad onto a bed of shredded lettuce or team it up with avocado.

Tuna Salad

Mix all ingredients together, then add the mayonnaise.
