Simple Egg Fried Rice
Serves 6 (120g serving)

1 t olive oil
2 eggs, scrambled
1 garlic clove, crushed
4 spring onions, chopped
2 T soya sauce
2 t rice vinegar
1/2 C frozen peas
3 C cooked rice
Ingredients
Notes:

1. In a frying pan, heat the olive oil and cook the scrambled eggs, remove from heat and set aside.
2. Fry the garlic, and the whites of the spring onion until soft.
3. Next add the cooked rice and the frozen peas and fry with the vegetables for a few minutes.
4. Add the soya sauce and the rice vinegar and cook for a further until the peas are cooked through.
