High Protein Spinach & Egg Muffins

10 large eggs
250 g fat free cottage cheese
100 g fresh spinach, chopped
100 g feta cheese, broken into small pieces
1 t dried oregano
1/2 t garlic powder
50 g cheddar cheese, grated
Salt and black pepper to taste

Batch prep these and eat all week. Just grab, reheat and go. 3 Muffins will deliver 33 g of protein in under 400 Calories. Pair with a mixed salad if you want to make a meal of it. The last up to 5 days in the fridge and freeze well too.

High Protein Spinach & Egg Muffins

1. Set the oven for 200 degrees Celsius.
2. Prepare a muffin tin using a touch of olive oil so that the muffins don't stick to the pan.
3. Whisk the eggs in a large bowl.
4. Add the remaining ingredients and mix well.
5. Scoop the mixture into the muffin tin.
6. Bake for approximately 30 minutes until the muffins are cooked through.
