Fluffy Apple Pie "Cloud" Oats

140 g rolled oats
100 ml liquid egg whites (or approx. 3 large eggs separated)
150 ml water or almond milk
1/2 apple, chopped
1 tsp cinnamon
100 g 0% fat Greek Yoghurt

This recipe really took me by surprise. It is absolutely delicious, and I love that these oats deliver on protein. Lovely on a cold winter's morning.

Fluffy Apple Pie "Cloud" Oats

1. Put the oats, milk/water, chopped apple, and cinnamon in a pot. Cook over medium heat until the liquid is mostly absorbed and oats are soft (about 3-4 mins).
2. Turn the heat down to low. Slowly pour in the liquid egg whites while whisking constantly with a fork or whisk. You must whisk fast! This stops the eggs from scrambling and instead whips them into the oats to create a fluffy, creamy texture.
3. Keep stirring for another 1-2 minutes until the mixture puffs up and becomes thick and voluminous.
4. Pour into a bowl. It will be piping hot and huge in volume.
5. Add the dollop of cold Greek Yoghurt on top (the hot/cold contrast is delicious) and a sprinkle of cinnamon.
6. Add some honey on top for a bit of sweetness.
