1 cup fat free Greek yoghurt
1 teaspoon lemon juice
1 teaspoon white wine vinegar
1/4 teaspoon Dijon mustard
1/4 teaspoon salt
Black pepper

Notes:
I like to prepare the mayonnaise for the week ahead on a Sunday. It lasts between 5 and 7 days.

1. Blend all ingredients together. Use a stand mixer or immersion blender. The mixture needs to be smooth and creamy.
2. Store in an airtight container in the fridge.
