1 chopped spring onion
2 tbsp 0% Greek yoghurt
2 tsp red wine vinegar
1/2 tsp Dijon mustard

Notes:
Enjoy on a bed of lettuce along with a variety of non-starchy vegetables or on a slice of sourdough bread.

1. Chop the chicken breast and place into a bowl.
2. Add the rest of the ingredients to the chicken and mix well.
3. Serve on lettuce leaves, in a salad or on a piece of sourdough bread.
