Banana Protein Pancakes

Makes 6 pancakes

2 ripe bananas (mashed)
2 eggs
¼ cup oat flour
1 scoop vanilla protein powder
1 tsp baking powder
1 tsp almond butter
Berries, almond butter, honey or walnuts for toppings

Banana Protein Pancakes

1. Crack the 2 eggs into the mashed bananas. Add the almond butter. Whisk until completely combined.
2. Add the oat flour (just blended oats), protein powder, and baking powder.
3. Gently stir the dry ingredients into the wet mixture. Do not over-mix.
4. Heat a non-stick skillet or griddle over low to medium-low heat.
5. Lightly grease the pan. Pour about ¼ cup of batter for each pancake. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
6. Flip carefully and cook for another 1–2 minutes until golden brown.
